Ingredients:

  • 1/2 cup organic butter or ghee (dairy-free option: use coconut oil)
  • 1/2 cup organic coconut sugar
  • 2 organic eggs (separated into whites and yolks)
  • 1 1/2 cups almond flour
  • 1 cup SORGHUM flour
  • 1/4 cup tapioca starch or another available starch
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon black sesame seeds

Instructions:

If the butter is hard straight from the fridge, microwave it for 30 to 40 seconds until softened.

-Then, mix the coconut sugar into the softened butter.

-Separate the 2 eggs into whites and yolks. Add the egg whites to the butter and sugar mixture, mixing until evenly combined.

-Set the egg yolks aside for later.

-Combine all the dry ingredients in another bowl: sorghum flour, almond flour, baking powder, baking soda, salt, and tapioca starch.

-Gently mix the dry ingredients into the wet ingredients to form a dough. If the dough is too soft to work with, refrigerate it for about 30 minutes.

  • Preheat the oven to 180ºC.

-Meanwhile, cut the dough into small pieces, each about the size of a walnut.

-Flatten each piece into a round cookie shape, then place on a baking tray lined with parchment paper.

-Beat the egg yolks until liquid. Use half of the egg wash to brush the top of each cookie. Set aside the remaining half of the egg wash.

-Place the tray on the middle rack of the preheated oven. Bake for 10 minutes.

-Remove the tray from the oven. Brush the remaining egg wash over the top of each cookie. While the egg wash is still wet, immediately sprinkle black sesame seeds over each cookie. Press gently to ensure the sesame seeds stick well. Apply the egg wash and sesame seeds to the cookies one at a time so the egg wash does not dry before the seeds are added.

-Return the tray to the oven and continue baking for another 7 minutes.

-Remove the tray from the oven and let the cookies cool completely.
